Description

Le konjac, Amorphophallus konjac, est une plante herbacée vivace issue de la famille des Aracées. Elle se développe à partir d’un rhizome tubéreux sphérique qui peut peser 3 à 4 kg et atteindre 25 cm de diamètre. Le konjac pousse naturellement dans les forêts d’Asie (Japon, Thaïlande, Vietnam, Corée du Sud et Chine méridionale) où il est cultivé comme légume. Bien que répandu dans plusieurs pays asiatiques, le konjac est principalement consommé et cuisiné au Japon pour la préparation notamment de boissons et diverses pâtes.

Le principal composant du tubercule de konjac est le glucomannane, polysaccharide et fibre alimentaire de haut poids moléculaire. Hydrosoluble, le glucomannane gonfle et forme un gel dans l’estomac lorsqu’il est absorbé procurant ainsi une sensation rapide de satiété.

En 2012, les autorités de santé européennes (EFSA, European Food Safety Authority et la Commission européenne) ont estimé, après examen des données scientifiques, que le glucomannane de konjac, consommé dans le cadre d’un régime hypocalorique, contribue à la perte de poids*.
