La spiruline est une cyanobactérie traditionnellement consommée depuis des siècles par certaines populations, et de nos jours encore au Tchad.
Autrefois classée parmi les «algues bleues-vertes», elle n’est pas à proprement parler une algue, même si par commodité on continue à la désigner comme telle. Elles croît naturellement dans les eaux alcalines de certains lacs, en zones chaudes. D’une taille de l’ordre de 0,1 mm, elle se présente généralement sous forme de minuscules filaments verts en spires plus ou moins serrées et nombreuses, suivant les souches.
C’est d’abord l’impressionnante teneur en protéines (50 à 70%) de la spiruline qui a attiré l’attention des chercheurs. Au cours d’analyses plus approfondies, nombre de points particulièrement intéressants sur le plan nutritionnel sont apparus : composition protéique équilibrée, présence de lipides essentiels rares, de nombreux minéraux et vitamines, des phytopigments (phycocyanine, chlorophylle, caroténoïdes).
